There is a new breakfast addiction in my house and it’s these Easy Pancake Bites. Poppable pancakes bites topped with all the fun toppings and perfect for dragging through a puddle of maple syrup are just irresistible.

Ingredients for Easy Pancake Bites

  • Complete pancake mix: Use your favorite pancake mix, you can find it in the breakfast aisle of any grocery store.
  • Water: That’s all you’ll need to turn the pancake mix into pancake batter.
  • All the toppings and mix-ins: Be create and add whatever makes you happy. Some of our favorite options are chocolate chips, blueberries, sprinkles and nuts. Diced strawberries, cinnamon, sliced bananas, a dollop of peanut butter or sweetened coconut would all be amazing options too.

How to Make Easy Pancake Bites

Mix the pancake mix and water together. Stir just until it comes together. Overstirred pancake batter results in tough pancakes.

Spray a mini muffin pan with nonstick spray then scoop a tablespoon of batter into each well. Leave them plain or top with your favorite mix-in.

Bake until a toothpick comes out clean. The whole process from start to finish will take less than 30 minutes.

Fun Ways to Serve

My kids favorite way to eat these is dipped in syrup for a quick and easy breakfast.

They would also make a really fun after school snack. I tried them out on the neighborhood kids over the summer one afternoon and they were a hit all around.

I also love the idea of adding them to your brunch spread. They are small enough to ensure you have room to fit a little bit of everything on your plate. Very important for brunch.

Make Ahead and Freezer Friendly

If you don’t have extra time in the morning, no worries. Make a batch the night before and pop them in the fridge overnight. In the morning all you need to do is zap them in the microwave for a few seconds and breakfast is ready.

You can also make a few batches ahead of time and freeze them to help with the morning rush. Once you have made the pancake bites, allow them to fully cool. Then it’s time to flash freeze them.

Place them on a cookie sheet in an individual layer and freeze for 2 hours. This step is important to keep them from sticking together during the freezing process.

Once they are frozen, transfer them to a freezer safe container and freeze for up to 1 month.

When you’re ready to eat them, grab out the desired amount and microwave until hot. Don’t forget to dip them in syrup.

  • 1 1/4 cups complete pancake mix
  • 3/4 cup water
  • Toppings: fruit, chocolate chips, sprinkles, nuts…

Instructions

  • Preheat oven to 350 degrees F. Spray a mini muffin pan with nonstick spray. Set aside.
  • Mix pancake mix and water together until it just comes together. Scoop 1 tablespoon of batter into each mini muffin cup. Top with desired toppings. Bake for 7 to 10 minutes. Dip in syrup.
