Grilled Hawaiian Chicken

I seriously cannot get enough of all the grilled things. During the summer we probably grill at least 3 times a week and we never get tired of it. I love not having a huge mess to clean up in the kitchen and the fact that grilling usually means healthy.

I shared a new favorite grilled veggie salad on my facebook page the other day that my friend Molly shared with me recently. It’s simple, healthy, tasty and you can use whatever vegetables you have on hand. And it’s pretty much delicious with anything. Especially this Grilled Hawaiian Chicken.

I combined pineapple (duh), ketchup, garlic, ginger, soy sauce and honey to create this super summery chicken that the whole family will crave. It’s sweet and salty with some depth from the soy sauce. The ginger in the marinade and green onion on top keep it tasting fresh.

Besides taste, the best thing about this recipe is the only dirty dishes it involves is a microplane. The simple marinade is just dumped into a plastic zip top bag and squished together until combined. Then add the boneless skinless chicken thighs and throw it in the fridge for a couple hours.

I mean, seriously, does it get any better or easier? These are my favorite kind of recipes for summer and entertaining.

I love being in the kitchen and cooking for my family and friends. But over the years I have realized when it’s a big group of people, simple is always better for me.

I’m a pretty good planner and ahead of time executor but I get way stressed when there are a ton of people in my house and I have lots of things going in the kitchen. Then people ask how they can help and the OCD controlling part of me kicks in and I tell them I’m good which just makes it worse. It’s a whole process people.

So instead, simple is better. And just because something only takes a few minutes to put together and involves simple ingredients does not mean it’s not fantastic. That’s another thing I’ve learned the hard way.

So, I love making this chicken to feed my family or a crowd. Make a big batch of sweet coleslaw (we’ve been obsessed this summer if you haven’t noticed from all the pictures) or macaroni salad to keep with the Hawaiian theme.

Ingredients
  1. 2 garlic cloves, grated
  2. 1 inch piece ginger, grated
  3. 3 green onions, whites only sliced
  4. 1 (8 oz.) can crushed pineapple
  5. 1/2 cup ketchup
  6. 1/4 cup soy sauce
  7. 1 Tbsp. honey
  8. 2 1/2 lbs. boneless skinless chicken thighs or breasts
Instructions
  1. Combine all the ingredients together in a zip top bag, except the chicken. Add the chicken once everything is mixed. Marinate for 1 to 4 hours.
  2. Preheat grill to medium high heat. Grill chicken until cooked through about 6 minutes per side.
