Summer has arrived and we’re living for it here. The super hot temps suprisingly haven’t hit us yet but we’re ready with these popsicles when they do.
The delicious combination of strawberries, mangos, coconut and a zip of lime create the most refreshing summer treat. Keep your freezer stocked witht these all summer long.

These layered popsicles may look complicated but they are quick and easy to put together. Here’s what you are going to need:
My Favorite Popsicle Mold
There are lots of popsicle molds out there but this Norpro mold is my favorite that I have used.
It’s easy to pop the popsicles out of the molds after they are frozen by running the mold under a little hot water. Once you get all the popsicles out, place them in a freezer bag and you can grab and go whenever the craving hits.
You can even get reusable popsicle sticks to cut down on waste.
Make the Strawberry Mango Popsicles
We’re going to start by making the mango layer. Add frozen mango, coconut milk, lime juice and honey to the blender. Process until nice and smooth.
Divide half of the mango mixture among your popsicle molds. Place the bit in a bowl and place in the freezer while you make the strawberry layer.
Add strawberries, coconut milk, lime juice and honey to a blender and blend until smooth. Divide the mixture among the popsicle molds.
Grab the remaining mango mixture from the freezer and divide it among the popsicles. Pop the lid on the mold and place the sticks. Freeze until solid, about 4 hours or overnight.

How long are these popsicles good in the freezer? For up to six weeks.
I just want mango popsicles. Can I do that? Yes, just switch the amount of strawberries for more mango and blend everything together at once then freeze without layering.
Do I have to use frozen fruit? Frozen fruit works best for this recipe. Fresh fruit will make the popsicles more watery and they won’t be as creamy when they freeze. That said, you can use fresh if that’s all you have on hand.
I don’t like the taste of coconut. What can I use in place of coconut milk? You can use plain Greek yogurt in its place. It’s a 1 to 1 replacement.
How long do I need to freeze these popsicles? They will take about 4 hours to freeze solid.

Strawberry Mango Popsicles
Ingredients
- 1 3/4 cups frozen mango chunks
- 1 3/4 cups full-fat coconut milk, divided
- 2 limes
- 2 Tablespoons honey, divided
- 1 cup frozen strawberries
Instructions
- Add frozen mango, 1 cup coconut milk, juice of 1 lime and 1 tablespoon of honey to a blender and blend until smooth. Place half the mixture in a bowl and place in the freezer. With the remaining mixture, divide among 10 popsicle molds. Set aside.
- Rinse out the blender. Add strawberries, remaining 3/4 cup coconut milk, juice of 1 lime and 1 tablespoon of honey and blend until smooth. Divide among the popsicle molds. Grab the remaining mango mixture from the freezer. Divide evenly onto the top of the strawberry mixture. Place lid on popsicle mold and place popsicle sticks in the mold. Freeze for at least 4 hours.
