I’ve made a lot of fun beverage recipes but I have to say this is the most refreshing one to date. The combination of lemons, watermelon and mint are perfection for the upcoming hot summer days.

The lemons are tart, the watermelon sweet and the mint gives it a little something special. It’s just the ultimate combination.

Ingredients for Watermelon Mint Lemonade

The ingredient list is nice and short for this recipe. Here’s what you are going to need:

  • Watermelon: You can use a seeded or seedless watermelon for this recipe. If it has seeds, remove them before proceeding with the recipe.
  • Lemons: The amount of lemons you need will depend on how much juice each yields. You will need 1 cup of fresh lemon juice.
  • Fresh mint: Provides such a bright, earthy flavor to the lemonade. It combines beautifully with the sweet, fresh flavors of watermelon.
  • Granulated sugar: We’re making a simple syrup to sweeten up this lemonade.

Make the Mint Simple Syrup

We’re using a simple syrup in this lemonade recipe for two reasons. First, it dissolves the sugar which ensures you don’t end up with a gritty drink.

Second, the fresh mint infuses its flavor in the syrup which allows you to have all that bright flavor without having pieces of mint in your drink.

So, if you’ve never made a simple syrup before, don’t worry. It couldn’t get, well…simpler.

Add water and sugar to a saucepan. Bring it to a simmer and let it go for about 2 minutes. Make sure all the sugar is dissolved.

Turn off the heat and stir in the mint leaves. Leave it on the stove top for 30 minutes to allow the mint to infuse.

Let it cool and it’s ready to use. Make sure to refrigerate. It’ll be good in the fridge for up to 1 month.

Watermelon Puree

Another simple step in the homemade watermelon mint lemonade process: make the watermelon puree.

All you need to do is add diced watermelon to a blender and puree until smooth. You could also use an immersion blender if you want.

Once pureed, place a fine mesh strainer over a large bowl and strain the watermelon. This will leave you with a super smooth watermelon puree.

Homemade Lemonade Tips

Simple syrup always. Like we talked about above, using a simple syrup to sweeten your lemonade is superior. It ensures the sugar is distributed throughout the pitcher and that there isn’t any grit due to undissolved sugar.

Use fresh lemons. Juicing fresh lemons will always be SO much better than using bottled lemon juice. The bright flavor stronger and way fresher.

How to get the most juice of of your lemons. Before cutting your lemons, roll them on the counter, pressing hard as you roll them back and forth. This will get the juices flowing.

Give it a stir. After it’s been refrigerated, homemade lemonade can seperate so make sure to give it a good stir before pouring.

Ingredients

For the mint simple syrup:

  • 1 cup water
  • 1 cup granulated sugar
  • 1/3 cup packed mint leaves

For the lemonade:

  • 6 cups cubed watermelon
  • 1 cup fresh lemon juice
  • 1 cup water
  • 1 cup mint simple syrup

Instructions

  • To make mint simple syrup: add water and sugar to a small saucepan. Bring to a simmer and cook for 2 minutes, until sugar is dissolved. Remove from heat and stir in mint leaves. Let steep for 30 minutes. Pour into a container with a lid or a bottle and store in refrigerator.
  • Add watermelon to a blender and blend until smooth. Strain through a fine mesh strainer into a clean bowl. Add to a pitcher. Add lemon juice, water and 1 cup mint simple syrup. Stir to combine. You can add more simple syrup if you want it sweeter. Store any unused simple syrup in the fridge for up to a month.
  • Chill lemonade for an hour before serving. Give it a good stir before pouring. Good up to 1 week.
