Fresh summer zucchini gets a major upgrade when tossed in butter and Italian seasonings and a hefty sprinkle of parmesan cheese. These Parmesan Zucchini Bites are the perfect summer side dish.

If you’ve never had roasted zucchini before, you are in for a treat. When it caramelizes it creates a slightly sweet flavor and tastes so wonderful.
Add in some spices and lots of parm and we have a new favorite side dish on our hands. It’ll be perfect for summer.
Ingredients for Parmesan Zucchini Bites
You know I love a simple ingredient list and this recipe totally hits the mark with only four ingredients. Here’s what you are going to need:
Assemble the Zucchini
Start by washing and drying your zucchini. Cut off the ends. Slice the zucchini into 1/4-inch coins.
Line them up on a large parchment lined baking sheet. The parchment paper makes clean up a snap.
Brush the zucchini with melted butter than sprinkle with Italian seasoning. Sprinkle with shredded parmesan cheese.
Bake until golden and tender.
Recipe Notes
Change up the herbs. I love Italian seasoning in this recipe but feel free to use what you have or love. A Greek seasoning would be delicious. Or add in some garlic powder for an extra kick of flavor.
Add extra cheese. If you are a cheese addict, add some extra cheese to make it indulgent.
Dip options. These are great on their own or served with a dip. Marinara sauce or ranch are my favorite options.
Out of zucchini? Yellow squash is delicous in this recipe too. You could sub it for the zucchini or do a mix of both for variety.

Parmesan Zucchini Bites
Ingredients
- 3 medium zucchini, 1/4-inch slices
- 1 Tablespoon butter, melted
- 1 1/2 teaspoon Italian seasoning
- 3/4 cup grated parmesan
Instructions
- Preheat oven to 450 degrees F. Line a large baking sheet with parchment paper or foil. Lay zucchini slices on the baking sheet in a single layer. Brush with butter than sprinkle with Italian seasoning. Sprinkle evenly with grated parmesan.
- Bake for 15 to 20 minutes. Enjoy on their own or dip in marinara or ranch dressing.
