If you’re looking for a simple, family friendly meal you can get on the table in about 30 minutes, you need to try this Queso Rice with Ground Beef. It uses ingredients you probably already have in your pantry plus a jar of queso.

This recipe has so many elements of my favorite types of recipes: one pot, simple ingredients, minimal time. Who doesn’t love a quick, hearty, cheesy rice?!

Ingredients for Queso Rice

  • White rice: I’m using white rice to make this a quick and easy dish. You can use whatever white rice you have on hand – long grain, basamti, jasmine…
  • Beef stock: To give lots of extra flavor to the dish. If you don’t have beef stock on hand, you can use water instead.
  • Onion: Will provide an extra layer of flavor.
  • Ground beef: Bulks up this delicious, cheesy rice. You can sub in ground turkey or ground chicken if you want.
  • Taco seasoning: I like to use my homemade taco seasoning but you can also grab a packet at the grocery store.
  • Queso dip: Grab a jar of your favorite queso
  • Taco toppings: We like shredded lettuce, diced tomatoes and sour cream. Avocado would be a great addition as well.

How to Make One Pan Queso Rice

Heat a large skillet or dutch oven over medium heat. Make sure it’s large enough to fit all your ingredients and that it has a tight fitting lid.

Saute the onion in a little olive oil. Once it’s softened, add the ground beef and break up with a wooden spoon. Continue to cook until it’s no longer pink.

Season with the taco seasoning. Stir in the white rice and beef stock. Bring to a simmer then cover and cook for 20 minutes.

Stir in the queso and it’s ready to serve. Portion into bowls and top with your choices of taco toppings.

Make it Meatless

If you want a side dish instead of a main dish or if you’re a vegetarian, you can make this dish without the ground beef.

When cooking, saute the onions then simply skip the ground beef and proceed with the recipe. It makes a great side dish to grilled chicken or your favorite Tex Mex dish.

Ingredients

  • 1 Tablespoon olive oil
  • 3/4 cup diced onion
  • 1 pound ground beef
  • 1 ounce packet taco seasoning or 1/4 cup homemade
  • 1 cup white rice
  • 2 cups beef stock
  • 2/3 cup queso dip
  • diced tomatoes
  • shredded lettuce
  • sour cream
  • sliced avocado

Instructions

  • Heat a large skillet or dutch oven over medium heat. Once hot, add the olive oil. Add diced onion and saute until slightly softened, 1 to 2 minutes. Add ground beef and break up with a wooden spoon. Cook until no longer pink.
  • Stir in taco seasoning, rice and beef stock. Bring to a simmer. Cover and cook for 20 minutes.
  • Remove from heat and stir in the queso dip. Portion out into bowls and top with desired toppings.
