I love a slow cooker recipe, especially on a busy winter night. They are simple to throw together and seem to always feel cozy.

I’m currently obsessed with this honey mustard chicken. I always have the ingredients for it on hand (major win) and it only takes minutes to put together in the slow cooker. Just what I want for a weeknight meal.

Ingredients for Slow Cooker Honey Mustard Chicken

Here’s what you will need to make this delicious entree:

  • Chicken: I used boneless skinless breast but you could also use chicken thighs if you desire.
  • Honey: This will bring sweetness and create a sticky sauce.
  • Dijon mustard: I like the sharp flavor dijon brings. You could also use yellow mustard if you want a more subtle flavor.
  • Worcestershire sauce: Gives richness and depth to the sauce.
  • Dried thyme: I love the combination of mustard and thyme. It provides a woodsy, fresh flavor too.
  • Garlic: Everything is better with garlic.
  • Brown sugar: Brings a little more sweetness and rounds out the sauce flavors.

How to Make Honey Mustard Chicken

Start by adding the chicken to your slow cooker. Season it with salt and pepper.

In a bowl, whisk together the remaining ingredients to create the honey mustard sauce. Pour over the chicken and flip to coat both sides. Set your slow cooker and let it go.

When the chicken is cooked through, use two forks to shred it and toss again in the sauce. It will seem like a lot of sauce at first but once you get the chicken coated it will be perfect.

How to Serve

My personal favorite way to serve this slow cooker honey mustard chicken is on a heaping pile of mashed potatoes with a steamed or roasted veggie on the side.

A side salad would also be a delicious option.

Make Ahead Options

This reheats really well so it’s a great option to consider if you meal prep. Roast some vegetables while it’s in the slow cooker and make a batch of rice and you’ll be set for lunches for the week.

This is also a great option for the freezer. You have two options here.

First, add the chicken to a freezer safe bag or container. Whisk up the sauce and add it over the chicken then freeze. Then all you have to do is thaw and dump in the slow cooker in the morning.

The second option is freezing after you’ve cooked it. Let the chicken cool completely then place in a freezer safe container. Freeze for up to 1 month.

Ingredients

  • 2 pounds boneless skinless chicken breasts
  • 1/2 cup + 2 Tablespoons honey
  • 1/2 cup Dijon mustard
  • 1 Tablespoon brown sugar
  • 2 Tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1/2 teaspoon pepper
  • 1 teaspoon kosher salt
  • 1 teaspoon minced garlic

Instructions

  • Place the chicken in your slow cooker. In a bowl, whisk together the remaining ingredients. Pour over the chicken.
  • Cook on low for 6 hours or high for 3 to 4 hours. Shred with two forks and toss well with the sauce.
