If you’re looking for a rice recipe that’s just as simple as making plain old white rice but a little fancy, this coconut lime rice made in the Instant Pot or on the stove top, is just what you need.
The coconut and lime give it major tropical vibes making it perfect for springtime and summer.

One of my favorite things to make in the Instant Pot is rice. It’s so quick and simple and turns out perfectly every single time.

Ingredients for Coconut Lime Rice
Instant Pot Instructions
To make this coconut lime rice in the Instant Pot, combine rice, coconut milk, lime juice, salt and water in the pot.
Place the lid on the Instant Pot, seal and set to cook for 4 minutes. While the rice is cooking, toast the coconut.
Heat a dry skillet over medium heat and add the coconut flakes. Cook, stirring often, until nice and golden. You will be able to smell the nutty goodness when it’s ready.
Once the rice is done, let it naturally release the pressure for 5 minutes before turning the valve. Stir in lime zest and top with toasted coconut.
Stove Top Instructions
Not everyone has an Instant Pot and that doesn’t mean you should miss out on this yummy recipe so I was sure to include stove top instructions as well.
Add coconut milk, water, lime juice and salt to a saucepan. Bring to a heavy simmer and add the rice. Bring down to a simmer, cover and cook 15 to 20 minutes, depending on the type of white rice you are using.
Stir in the lime zest and top with toasted coconut before serving.
How to Serve Coconut Lime Rice
I love topping it with some toasted coconut for some added crunch and texture to keep it interesting. It goes amazingly well with curries, stir-fries, this Grilled Hawaiian Chicken and lots more.

For the Instant Pot:
- 2 cups basmati rice
- 1 13.5 oz. can full fat unsweetened coconut milk
- 1 1/4 cups water
- 1 tsp. kosher salt
- 1 lime, zested and juiced
- 1/4 cup unsweetened coconut flakes
For the Stove Top:
- 2 cups basmati rice
- 1 13.5 oz. can full fat unsweetened coconut milk
- 1 3/4 cup + 2 Tbsp. water
- 1 tsp. kosher salt
- 1/4 cup unsweetened coconut flakes
Instructions
- For the Instant Pot: combine everything but the lime zest and coconut flakes in the instant pot. Set on manual for 4 minutes. Meanwhile, toast the coconut. Heat a skillet over medium heat. Add coconut and cook, stirring often, until it turns golden brown. Watch carefully as it can burn quickly. Once rice is done, allow the steam to release naturally for 5 minutes then switch the valve to release the remaining pressure. Stir in the lime zest. Top with toasted coconut.
- For the Stove Top: combine coconut milk, water, salt and lime juice in a large saucepan over high heat and bring to a boil. Stir in rice and reduce to a simmer. Cover with a lid and cook for 15 minutes. Meanwhile, heat a small skillet over medium heat. Add coconut and cook, stirring often, until golden. Watch closely as it can burn quickly. Remove rice from heat and stir in lime zest. Top with toasted coconut.
