Who doesn’t love a mini food?! Whether it’s mini pies, mini meatloaves, mini hasselback potatoes or these Individual Breakfast Casserole Bites, they are always a way bigger hit than the full-size version.
Make it mini and they will adore it. Especially kids.

Ingredients for Individual Breakfast Casserole Bites
How to Make Individual Breakfast Casserole Bites
Preheat the oven to 350 degrees F. Spray a muffin pan well with nonstick spray. You can also use a silicone muffin pan to ensure they won’t stick (that’s what I do).
Heat a large pan over medium heat. Add the breakfast sausage and cook until browned and no longer pink inside.
Whisk together the eggs and milk together. I like to do this in a liquid measuring cup as it makes it easier to pour into the muffin pan.
Place the muffin pan onto a baking sheet. This will catch anything that may overflow.
Evenly divide the hash browns among the 12 cups. Do the same with the sausage and shredded cheese.
Pour the egg mixture evenly among the muffin cups then bake.
Super Customizable
I included the ingredients we use and love but these Individual Breakfast Casserole Bites are customizable to any taste.
You can sub in crispy bacon or Canadian bacon for the breakfast sausage.
If you want to add some vegetables, chopped bell peppers, broccoli, onion or spinach would all be delicious additions.
It would be fun to set out a whole selection of add-ins in little bowls and let everyone make their own mini breakfast.
Make Them Ahead of Time
If you have a busy morning or brunch planned, you can make these ahead of time to make things easier.
There are two make ahead options for these bites. First, you can make then allow them to cool completely before placing in an airtight container and refrigerating.
When you’re ready to eat, gently reheat them in the microwave.
The other make ahead option is to cook the sausage and assemble the individual breakfast casserole bites then place them in the refrigerator.
Then in the morning all you have to do is pop them in the oven and they are hot and fresh for breakfast.
Great for All Occasions
These Individual Breakfast Casserole Bites are great for so many occasions.
Because they can be made ahead of time, they are a delicious easy school morning breakfast. Make a big batch on Sunday and have an easy lunch for the week.
They also are super fun for brunch. Because they are mini, they are easy for your guests to grab and leave lots of room for the other yummy dishes on their plates.
I also love these for holiday mornings, especially Christmas morning. They are easy to prepare and you can even get them ready the night before like mentioned above.
That way you don’t have too much time taken away from all your Christmas morning festivities.

Individual Breakfast Casserole Bites
Ingredients
- 1/2 lb. breakfast sausage
- 7 large eggs
- 1/2 cup milk
- 1/2 tsp. kosher salt
- 1 1/2 cups frozen southern hash browns
- 1 1/4 cups shredded cheddar cheese
- Nonstick cooking spray
Instructions
- Preheat oven to 350 degrees F. Heat a large skillet over medium heat. Add breakfast sausage and break up with a wooden spoon. Cook until browned and cooked through.
- In a large bowl or large liquid measuring cup (preferably something with a spout), whisk togeher the eggs, milk and kosher salt. Set aside.
- Place a muffin pan on a baking sheet. This will catch anything that may overflow. Spray the muffin pan generously with nonstick spray. Evenly divide the hash browns among each muffin cup. Repeat with sausage and shredded cheddar cheese. Evenly pour the egg mixture into each muffin cup.
- Bake for 30 minutes, or until no longer giggly in the middle when you give the pan a light shake.
