I am beyond excited about today’s recipe. It involves a few of my favorite things, buffalo sauce, the grill and turkey. You know it’s going to be a good day when you have that combination.
Did you know that June is Turkey Lovers’ Month?! It’s not just for Thanksgiving my friends. Some of my favorite ways to enjoy turkey are synonymous with summer, grilling and smoking.
And that is why I’m so pumped to be sharing this Grilled Buffalo Stuffed Turkey with you all. It just screams summer and will quickly become a go-to recipe during these hot months.
If you are a lover of all things buffalo this turkey is going to be right up your alley! It has a triple punch of buffalo goodness throughout the recipe that you are going to adore.
Ingredients for Buffalo Stuffed Turkey
The ingredient list is pretty simple. Here’s what you need:
When you’re at the store, look for thin cut turkey cutlets. Because we’re stuffing and rolling up the turkey, we want to ensure it’s not too thick which could cause dryness from having a longer cook time.
Thin cutlets also mean dinner is done quickly which is always a plus during the hot summer months.
If you aren’t able to find turkey cutlets at your local grocery store, make sure to talk to an employee in the meat department. If they know you are interested in different cuts that can lead to more variety in your store in the future.
I recommend using full fat cream cheese in this recipe. First, it tastes way better. Second, a lower fat or fat free cream cheese could separate and get weird as the turkey grills. We don’t want that.
If you don’t like blue cheese, you can substitute shredded cheddar in its place. It won’t be quite as traditional but it is still really delicious.
How to Make Buffalo Stuffed Turkey
There are a few steps to making this recipe. First, start by marinating the turkey. Douse the turkey with your favorite hot sauce and let it soak up the spicy goodness for 3o minutes to an hour.
Turkey is a great protein for marinating since it will really soak up the flavors and seasoning of the marinade.
While the turkey is marinating, mix together the filling. Stir together softened cream cheese, hot sauce, garlic powder, sesasoned salt, shredded carrots and blue cheese crumbles.
The filling is creamy and slightly spicy with a nice bite from the blue cheese. The shredded carrot adds some sweetness to round out the flavors.
Preheat your grill to 400 degrees F. Lay the marinated turkey cutlets on a flat surface, preferably a dishwasher safe cutting board. This will keep from any cross-contamination and ensure you can get the board washed well after use.
Spread the filling evenly among the turkey cutlets. Roll up the turkey like a pinwheel and secure with a toothpick or two if needed.
The last step before grilling is to make a quick buffalo sauce for basting. Simply melt butter and hot sauce together in the microwave and stir it well.
Time to Grill
The key to ensuring you have juicy, perfectly grilled turkey every time is using a digital meat thermometer. Turkey needs to be cooked to 165 degrees F so set your thermometer to that temperature and insert the probe into the thickest part of the turkey cutlet.
Place the stuffed turkey on the grill and let it cook for 5 minutes. Brush with a generous amount of buffalo sauce then flip.
Brush again and flip after another 5 minutes. Do this one more time and your turkey should be cooked to perfection.
But keep in mind, the grill time will depend on the thickness of your turkey cutlets. That’s why a meat thermometer is clutch for this and any grilling recipe.

The Results
The end result is a roll of juicy, perfectly cooked and spicy turkey with the cheesiest, slightly spicy filling oozing out when you cut your first bite. It’s everything this summer needed.

Grilled Buffalo Stuffed Turkey
Ingredients
- 4 thin cut turkey cutlets
- 1/2 cup hot sauce
For the Filling:
- 3 oz. cream cheese, softened
- 1/2 tsp. garlic powder
- 1/2 tsp. seasoned salt
- 1 Tbsp. hot sauce
- 3 Tbsp. shredded carrots
- 2 Tbsp. blue cheese crumbles
For Basting:
- 3 Tbsp. butter
- 3 Tbsp. hot sauce
Instructions
- Place turkey in a bowl with a lid. Pour 1/2 cup hot sauce over turkey and flip around to ensure it's completely coated. Marinate for 30 minutes to an hour in the refrigerator.
- Meanwhile, make the filling. Stir together the cream cheese, garlic powder, seasoned salt, hot sauce, shredded carrots and blue cheese crumbles. Set aside.
- Preheat grill to 400 degrees F. Remove turkey cutlets from the marinade and lay on a cutting board. Divide the filling evenly between the cutlets and spread. Roll up turkey and secure with toothpicks.
- Add butter and hot sauce to a microwave safe bowl and microwave in 20 second increments until melted. Whisk together.
- Insert a meat thermometer into thickest part of the turkey and place on preheated grill. Baste with the buffalo sauce. Cook for 5 minutes. Flip, baste and cook another 5 minutes. Flip, baste and cook another 5 minutes, or until temperature has reached 165 degrees F.

Turkey is definitely not just for thanksgiving! What a great idea, it’s like everything I love about a buffalo chicken wing, but with that yummy grill flavor and sooo much easier than deep frying anything. Super tasty recipe!
