Are you so ready for summer? Or is it just me?! Warm weather. Running through the sprinklers. No online learning. I’m ready for all of it.

When I think of summer, pina colada’s are at the top of my list. They are so tropical and sweet and just scream summer.

Ingredients for Pina Colada Popsicles

These popsicles are the easiest to make. They take the classic ingredients in a pina colada and turn them into a popsicle. Here’s what you need to make them:

  • Cream of coconut
  • Crushed pineapple
  • Sweetened shredded coconut

Cream of coconut is found in the liquor aisle of the grocery store with the mixers. It’s super thick, creamy and ridiculously coconut-y.

The whole can of crushed pineapple, juice and all, gets added to the mix to really up the sweet pineapple flavor.

Pina coladas usually involve rum too. I wanted to keep these kid friendly so I skipped the rum but I’m not saying you have to. If you want to make a boozy version, add a splash of rum to the mixture.

You don’t want to add too much booze because then they won’t freeze properly. Add two tablespoons at the most.

How to Make Pina Colada Popsicles

These popsicles are the easiest to make. Literally add everything to a blender or food processor and pulse until everything comes together.

Be sure not to blend it until completely smooth. You’ll want little bits of pineapple throughout for texture and yummy little surprise bites.

Once the mixture is blended, it’s time to pour them into molds and freeze.

These are the popsicles molds I have and love. If you don’t have any and need to make these ASAP, you could use Dixie cups. If you go this route, you’ll end up with a lot more popsicles than the recipe states.

  • Add ingredients to a blender. Pulse until it comes together but there are still small chunks of pineapple. Divide the mixture into your popsicles mold. Freeze for at least 4 hours and enjoy.
