I love a simple slow cooker meal. The ease of just throwing a bunch of ingredients in there, turning it on and coming back to dinner hours later is kind of the best.
This Slow Cooker Pork Verde is one of the easiest slow cooker recipes I have shared yet.
Slow Cooker Pork Verde Ingredients
I told you it was easy. This Herdez Salsa Verde is my hands down favorite that I’ve tried. It’s super flavorful, has just the right amount of heat and is readily available.
Make sure you love the flavor of the brand you choose since it is such a large component of the recipe.
How to Make Pork Verde
Grab a small bowl and mix together the cumin, chili powder and kosher salt. Sprinkle it over the pork loin and place in the slow cooker.
Pour the salsa verde over the pork loin, set the slow cooker to low and you are done. It honestly can’t get easier.
Because pork loin is so lean, you want to make sure not to overcook it. A one pound pork loin will only need 4 hours on low.
All the Flavor
Like I said earlier, the ingredient list is short and sweet but this pork is packed with so much flavor. Most of it comes from the salsa verde but the added cumin and chili powder add some delicious smokiness to the pork.
Salsa verde consists mainly of tomatillos, cilantro, garlic, serrano peppers and onion. It adds the perfect bright, fresh, spiciness to the pork.
I love that this dish is packed with flavor but still healthy.
So Many Possibilites
Once this pork verde is cooked and shredded there are SO many ways to enjoy it.
Make some homemade Mexican rice and black beans to make burrito bowls. Throw it in a tortilla for tacos.
Make a salad with romaine lettuce, black beans, roasted corn, peppers, avocado and crumbled queso fresco. You could make a salsa verde ranch by mixing bottled ranch and some of your extra salsa from the jar. I mean, how good does that sound?!
Make pork verde enchiladas happen. Roll the pork in corn or flour tortillas (whichever you prefer) then pour the rest of your salsa verde over top and sprinkle with cheese. Bake for 30 minutes and you’ll have the most flavorful enchiladas around.
Use it in quesadillas. Throw it between some bread with some monterey jack cheese and make a grilled cheese.

Ingredients
- 1 1/2 tsp. ground cumin
- 1/2 tsp. chili powder
- 1 tsp. kosher salt
- 1 lb. pork loin
- 3/4 cup salsa verde
Instructions
- In a small bowl, combine cumin, chili powder and kosher salt. Sprinkle evenly over the pork loin. Place pork loin in slow cooker. Pour salsa verde over the pork. Cook on low for 4 hours. After cooking, shred and toss with remaining salsa in the slow cooker.
