Have you gone completely stir crazy yet? I hope you’re doing well my friends.
One of my favorite ways to pass the time is to bake and I thought you all might get some enjoyment out of it too. So I’ve compiled a list of 12 fun and relatively easy baking and dessert recipes that you can make right now.
They feature easy, common ingredients you’ll already have in your pantry and refrigerator. If there are any ingredients that you may not have (like a lemon) I’ll do my best to provide you answers, substitutions and alternative options. And as always you can drop me an email with any questions.
1. Homemade Snowcaps
These homemade snowcaps are the actual easiest dessert to make. All you need is chocolate chips or chocolate bars chopped up and nonpareils.
Melt the chocolate, dollop it on parchment or wax paper and pile on the sprinkles. If you don’t have nonpareils, you can use any kind of sprinkle you have.
This is super fun for the kids. If you place the parchment paper on a rimmed baking sheet it helps limit the mess too.
The hardest part is waiting for the chocolate to set up. But you can put it in the fridge to speed up the process so it’s a rather quick recipe all around.
Who doesn’t love sweet little bites of chocolate and sprinkles?!
2. Blueberry Bread
If you dont’ have fresh blueberries right now you can definitely make this bread with frozen blueberries instead.
If you don’t have lemon juice, you can sub in white vinegar. This may sound weird but the lemon juice is mixed with milk to make your own buttermilk since most don’t keep that on hand.
You basically need something acidic to turn regular milk into buttermilk so that’s why vinegar works here as well. Don’t worry, you won’t be able to taste the vinegar.
The remaining ingredients are simple and common. This blueberry bread is a great breakfast or dessert option. It’s best served warm with a big slather of softened butter.
3. Cheese Stuffed Breadsticks
You only need 4 ingredients for these ridiculously cheesy breadsticks. The recipe calls for premade pizza dough, string cheese, garlic salt and butter.
If you don’t have premade pizza dough you can make your own. This is my favorite pizza dough recipe. Or you could thaw some Rhodes bread dough/rolls. You all know how I love recipes using Rhodes.
If you don’t have string cheese, you can cut pieces of mozzarella or even cheddar in a pinch.
4. Orange Chocolate Chunk Muffins
We love muffins for breakfast around here and these are one of our absolute favorites.
If you don’t have any oranges you can turn this into a simple chocolate chunk muffin recipe by replacing the OJ with more buttermilk (or regular milk) and leaving out the orange zest.
Or you could replace it with lemon and switch out the dark chocolate for white chocolate. That would be super springy and delicious.
And remember the buttermilk sub we talked about above.
5. Microwave Mug Cakes
This one is less baking projects and more I need sugar stat. It’s that late night fix to round out a tough day.
And we all know sprinkles make everything better. This recipe was made for quarentines.
6. Cinnamon Sugar Pecans
These cinnamon sugar pecans are super easy to make and everything you need should be in your pantry.
The pecans are first toasted in the oven then finished on the stove top until they are coated and crunchy.
I love these crunchy guys for a quick, sweet treat or on top of salads. They are also great mixed into granola.
7. Shark Cupcakes
Ok, so these take a little more time than some of the other options here but they are so fun and the kids will totally love helping make them.
The base of the cupcake uses a box mix with a few staple add-ins. If you don’t have a box mix you can definitely make your favorite from scratch recipe.
They are filled with strawberry jam then frosted with ocean blue frosting and topped with fondant fins.
Did you know you only need marshmallows and powdered sugar to make your own fondant?! It’s easy and you tucker the kids out kneading and shaping it.
8. Bakery Style Chocolate Chip Cookies
I feel like you should definitely be going big when it comes to your desserts and baking projects right now. These Bakery Style CCC’s are super chewy and just so freaking good.
Only simple cookie ingredients needed. These are better when the dough is frozen for a few hours before baking. But if you don’t have that kind of patience right now I totally feel you and you should just bake the dough right away.
I’ve done it before and they are still delicious.
9. Take 5 Bark
Have you ever had a Take 5 candy bar before? They are the literal best. I’m all about that sweet and salty combination.
This bark features all the ingredients of the candy bar in a bark form. First a simple caramel sauce made from brown sugar and butter is made. Then we stir that into peanut butter and swirl it with chocolate.
Pretzels and peanuts join the party and it’s refrigerated until solid. Break it into pieces and you’re sweet and salty craving will totally be satisfied.
10. Funfetti Cake Batter Skillet Cookie
I mean, just look at it. If that doesn’t say “take away all my pain” I don’t knwo what does.
This one has a couple not so staple ingredients but have no fear, I have some subs for you and it will still be bomb.
This ooey, gooey skillet cookie tastes just like cake batter thanks to the combination of almond extract and butter extract. I understand these aren’t normal ingredients for most people.
If you don’t have these, simply use vanilla extract instead.
The other ingredient you may not have is instant vanilla pudding. If you don’t, just leave it out. It’ll still be crazy good.
11. Peanut Butter Banana Bread
Banana bread is a classic and I always have the ingredients for it. I bet you do too.
Peanut butter is mixed into the batter for a subtle but still there flavor. And of course when there’s peanut butter we need chocolate chips.
It’s quick and easy to throw together and is great for breakfast or snacking.
12. Rainbow Cheesecake Bars
I mean, these are just SO fun. The kids will enjoy making these so much. And you can talk about rainbows and turn it into a science lesson. Boom. Schooled.
The recipe is flavored with fresh lemon but if you don’t have a lemon just skip that part in the recipe. They’ll still be great.
I love cheesecake in any and all forms so this one is my quarantine dream.
