I feel like people either love or hate meatloaf. Ya feel? What side do you land on in the meatloaf debate?
I hope you love it because today’s recipe is all about combining the classic meatloaf with the classic cheeseburger. I think you’re going to love it.
Ingredients
You’ll need the basic meatloaf ingredients plus a few extra to add that cheeseburger spin. Here’s a list of everything you need:
Two types of cheeses you ask? Yes, it’s very necessary for the ooey gooey cheeseburger vibes.
I chose to shred the onion for three reasons. We don’t dig big chunks of onion in our meatloaf (or anything for that matter) so this ensures the pieces stay fine. Use a cheese grater for shredding the onion.
Second, it’s way faster than mincing the onion. Lastly, as you grate the onion it releases some juice which adds even more flavor to the meatloaf.
How to Make Cheeseburger Meatloaf
Grab a large bowl and using your hands, mix together the ground beef, onion, egg, bread crumbs, salt, pepper, ketchup, mustard, worchestershire sauce and shredded cheddar cheese.
Once it’s fully combined, form it into that classic meatloaf shape on a baking sheet covered in parchment paper.
Mix together more ketchup and mustard and spoon it over the meatloaf. Top the sauce with a few slices of American cheese and it’s ready for the oven.
This meatloaf is cooked at a little higher temperature, 400 degrees F, to make it more weeknight friendly. It will only need about 35 minutes to bake.
To ensure your meatloaf is cooked through you can use a digital meat thermometer. You’ll want it to be 155 to 160 degrees F.
The end result is a super juicy, cheesy meatloaf that seriously tastes just like a cheeseburger without the bun. The combination of ketchup, mustard and onion definitely make it cheeseburger worthy.
What to Serve with Cheeseburger Meatloaf
Because this meatloaf tastes just like a cheeseburger, the number one go to side for me would be fries, duh.
These super crispy roasted potatoes would be a delicous option too. A green salad along with it will provide the veggie element of a typical cheeseburger.
This Pickle Potato Salad would be delicious too and add more cheeseburger vibes. Can you tell I have a thing for potatoes with meatloaf?!
