Have you tried a mug cake yet? I recently developed a recipe for a vanilla mug cake for my friend Jessica over at Fantabulosity and I immediately knew I needed to share one with you. And what’s better than a funfetti cake batter version?! NOTHING. Sprinkles for life.
So Many Reasons to Love a Microwave Mug Cake
I think first and foremost, the biggest selling point is as follows: you will have hot, fresh cake in literal minutes. Life is good. Just a minute or two of measuring and mixing ingredients then another couple of minutes for microwaving and ding, cake is ready for your belly.
It’s single serving so you have just enough to satisfy your sweet tooth without having lots of extra dessert lying around. As much as I love a dozen cupcakes, sometimes I just don’t need that in my life. Ya know what I’m saying?
One of my favorite things about this might be that you don’t dirty any dishes. Everything is mixed in the mug the cake is cooked in so you literally have a mug and a few measuring spoons. That means you won’t wake up to a messy kitchen after your late night sweet tooth.
Basic Ingredients
The ingredients for this microwave mug cake are basic and probably always on hand. You’ll need butter, vanilla extract, milk, all-purpose flour, sugar, baking powder, salt, sprinkles and a secret ingredient.
This secret ingredient will most likely not be in your pantry but once you try it, I’m pretty sure it will become a staple. And don’t worry, I have simple substitutions included if you don’t want to grab it at the store.
Have you seen cake batter flavoring in the baking section of your grocery store? I just discovered it last month and I knew I had to make a funfetti, cake battery something with it. I grabbed mine at Wal-Mart and I also found it on Amazon. If you can’t find it, you can replace it with extra vanilla extract or 1/8 teaspoon of almond extract (a little goes a long way).
It adds that cake batter flavor to the funfetti cake and really puts it over the top. I’m excited to make more things with this delicious bottle of goodness and any suggestions are welcome in the comment below.
Things to Know
I discovered when making this recipe that not all mugs are microwave safe so be sure to check that before proceeding with the recipe.
Be careful not to overmix the batter for your microwave mug cake. As the directions state below, mix together all the wet ingredients first then stir in the dry ingredients until it just comes together. This helps keep the cake light and fluffy.
Microwaves are different. What takes a minute and a half in one microwave may take a minute and forty five seconds in another so keep that in mind when making this cutie cake. Start with the lowest option and if it’s still kind of gooey add another 10 seconds.
Turn It Into a Fun DIY
I’m loving the idea of turning this delicious microwave mug cake into a charming DIY gift.Mix the dry ingredients in a cute cellophane bag, tie it with a pretty ribbon and print out the recipe instructions.
Put it all in a cute mug and gift away to teachers, neighbors and friends. I’m considering this for teachers this year along with a gift card (because duh). Would any of you be interested in a cute, free printable to go along with this recipe? Let me know in the comments.
Whether you’re solving that late night craving, surprising your kids with a fun after school treat or thanking someone special in your life, this funfetti microwave mug cake is sure to be a hit.
