This grilled buttermilk chicken recipe I’m sharing with you all today is the ONLY grilled chicken recipe you are going to need going forward. I’ve been wanting to create a simple, tender, all-purpose chicken that can be used for all the things and this is it.
Marinating chicken in buttermilk makes it so crazy tender. The ideal is to marinate this overnight but you could get away with 4 hours if you forget to do it the night before.
The good news though is it literally takes 2 minutes, if that, to make the marinade so it’s not a big thing to do before getting to bed.
For a long time I was using ziplock bags for marinating. They are super easy, don’t take up much space in the refrigerator and make for easy clean up.
Buuut, I’ve been trying to cut my use of plastic and disposable products whenever possible. I recently picked up these glass pyrex containers to replace my old plastic tupperware and they work suprisingly well for marinating.
I went with mild, universal flavors so that this chicken could be eaten on its own or used for other recipes such as salads, sandwiches or soups. There are some herbs going on in the marinade so that it isn’t just plain, boring grilled chicken.
I used fresh garlic, dried oregano, dried dill and dried thyme to add flavor to the buttermilk marinade. It has got a bit of a ranch vibe going on.
This recipe is really forgiving so you can substitute herbs such as parsley or rosemary if you’re running low on something or prefer different flavors.
So basically, grill up this chicken to have on hand for easy lunches, dinners and all the things throughout the week.
Grilled Buttermilk Chicken
Ingredients
- 1 1/2 cups buttermilk
- 3 cloves garlic, minced
- 1/2 tsp. kosher salt
- 1/4 tsp. black pepper
- 1/4 tsp. oregano
- 1/2 tsp. dried dill
- 1/4 tsp. dried thyme
- 1 1/2 – 2 lbs. thinly sliced chicken breast
Instructions
- Whisk together buttermilk, garlic, salt, pepper, oregano, dill and thyme together in a bowl that has a lid. Add the chicken and marinate overnight.
- Heat grill over medium heat. Grill chicken about 5 minutes per side.
