I don’t know about you my friends but I majorly struggle with coming up with exciting and different side dishes throughout the week. You can only have steamed veggies, rice or salad so many times.
So I made it my mission to come up with some new and exciting side dish options that are still super simple and use ingredients most of us already have in our refrigerator and pantry.
These taco roasted potatoes are the first weeknight option I’m sharing and I’m pretty sure you’re going to love them.
I took basic roasted potatoes and spiced them up with all the spices and flavors you would use on taco meat. I based the spice mixture off my favorite taco seasoning mix with just a few minor changes.
To make these taco roasted potatoes you’ll need:
- Potatoes
- Olive oil
- Chili powder
- Garlic powder
- Onion powder
- Oregano
- Cumin
- Salt
- Pepper
Such simple ingredients that come together to create something so flavorful. The potatoes get tossed in olive oil and all those yummy spices and roast in the oven for 25 minutes, until tender and caramelized. This is my favorite pan to roast them on. They don’t ever stick to this pan and clean up is a breeze.
So not only is this recipe super simple, it doesn’t require any grocery shopping and it’s done in less than 30 minutes. Win, win, win.
They are delicious dipped in sour cream, sour cream mixed with salsa or guacamole.
Serve them up as a delicious side dish to this Baked Enchilada Chicken, meatballs or chipotle shredded beef.
Taco Roasted Potatoes
Ingredients
- 1 1/2 lbs. potatoes, 1/2-inch dice
- 1 Tbsp. olive oil
- 1/2 Tbsp. chili powder
- 1/8 tsp. garlic powder
- 1/8 tsp. onion powder
- 1/8 tsp. oregano
- 3/4 tsp. cumin
- 1/2 tsp. kosher salt
- 1/2 tsp. black pepper
Instructions
- Preheat oven to 425 degrees F. Place potatoes on a rimmed baking sheet. Drizzle with olive oil and toss until well coated. Set aside.
- In a small bowl, mix together the chili powder, garlic powder, onion powder, oregano, cumin, salt and pepper. Sprinkle over the potatoes and toss until well coated. Bake for 15 minutes. Remove from oven and flip. Cook another 10 minutes.
