Celebrate the 4th of July with this sweet, creamy Patriotic Cheesecake Fruit Salad. It’s packed with juicy blueberries, raspberries and strawberries that are tossed in a creamy cheesecake sauce. The perfect dessert or side dish to celebrate America.It seems crazy to think the 4th of July is right away the corner but here we are in the middle of June. The 4th is one of my very favorite holidays so I look forward to it every year. The fireworks, the cookouts, the fireworks. Have I mentioned I love fireworks?
I also love a good theme so planning and creating some fun red, white and blue dishes each year is always part of the 4th of July fun. I have a couple recipes I’m sharing this year involving berries that I’m pretty sure you are going to love and first up today is this Patriotic Cheesecake Fruit Salad.
I know fruit is supposed to be healthy but it’s a holiday so the calories won’t count anyway. And you still are eating fruit so go ahead and pat yourself on the back.
This fruit salad starts with a combination of raspberries, blueberries and strawberries. You can use whatever amounts of each that you want, as long as you end up with about 32 ounces of fruit all together.
I gave the numbers for what we prefer but mix it up to suit your taste. If you don’t like raspberries, replace them with more blueberries or strawberries. Or add in blackberries in place of something else.
The sauce that the berries are tossed in super simple to whip up. Softened cream cheese is whipped with Cool Whip, a little bit of sugar and vanilla extract. That’s it. Then all that’s left is gently folding in the berries for a perfect, delicious dessert.
It’s best when eaten right away since the berries release their natural juices as it sits and causes the sauce to separate and get kind of lumpy. It’s still tastes good but if you can, wait until serving to combine the fruit with the cheesecake goodness.
Patriotic Cheesecake Fruit Salad
Ingredients
- 6 oz. blueberries
- 6 oz. raspberries
- 16 oz. strawberries, sliced
- 8 oz. cream cheese, at room temperature
- 2 cups Cool Whip
- 2 Tbsp. granulated sugar
- 1 tsp. vanilla extract
Instructions
- In a large bowl, gently toss together the blueberries, raspberries and strawberries. Set aside.
- In a stand mixer, cream the cream cheese until smooth. Add the cool whip, sugar and vanilla and mix until thoroughly combined.
- Gently fold the cream cheese mixture into the fruit.
