I made this 4 Cheese Flatbread Pizza months ago and I’m kicking myself for scheduling it smack in the middle of Lent. It’s just rude to have to talk about cheese while not being able to eat said cheese.

But I love you my friends and I don’t want to keep this easy and ridiculously cheesy dinner from you any longer.

I love making homemade pizza dough (this is my favorite recipe) but sometimes it just takes too much time and planning or I forget to start it in time. Some days you just want a pizza without all the work.

4 Cheese Flatbread Pizza

In comes the idea of using flatbread or naan to get pizza on the table fast. Bonus, you can find good quality flatbread at most grocery stores these days. 

These flatbread pizzas are loaded up with provolone, mozzarella, Parmesan and {homemade} ricotta. I decided to keep the base simple by brushing them with olive oil rather than a pizza sauce so the cheese could really shine. 

I know I’ve waxed poetic in the past about homemade ricotta but it’s just so dang good. You of course can use store-bought ricotta for an easier option but once you make it yourself, I don’t think you’ll ever go back. I make my ricotta the night before to make the process easier.

I also make sure I have another dish planned for the week to use it up since only a small amount is needed for this 4 Cheese Flatbread Pizza. Please oh please don’t waste the cheese. Make these or these.

And as if these couldn’t get any better, they only take about 20 minutes to make from start to finish making pizza night a weeknight possibility. Total win.

Ingredients

  • 4 Flatbread (or Naan)
  • 2 Tbsp. olive oil
  • 4 slices provolone, sliced into thin strips
  • 1 1/3 cups mozzarella
  • 1/2 cup parmesan cheese
  • 1/2 cup ricotta
  • Italian seasoning

Instructions

  • Preheat oven to 400 degrees F. Place each flatbread on a baking sheet or pizza stone and with 1/2 tablespoon olive oil each. Top with equal portions of provolone, 1/3 cup each mozzarella and 2 tablespoons each Parmesan. Dollop ricotta evenly over the flatbread. Sprinkle with Italian seasoning. Bake for 10 to 14 minutes until gooey and melted. 
  • If you want a more golden, crispy top turn on the broiler and leave under for 1 minute. Watch the pizzas carefully as they can burn quickly.
