You guys, this Caramel Cashew Chex Mix is seriously addicting. I’m just going to apologize right now because you will be eating this by the handfuls. Then you’ll look down and the container will be half gone. And you’ll be like “what the what?” where did all my chex mix go? Then you’ll give the rest away so you will stop it.
You know, I’m just guessing about this whole scenario. Didn’t happen to me. Nothing to see here, move along.
Seriously though, I’m not a big fan of caramel (I realize there is something wrong with me) and I freaking love this stuff. It’s crunchy and sweet and a little bit salty. You know I love a sweet and salty treat so this is just perfect.
Cookies are obviously super popular this time of year but I think it’s nice to include a few different things if you’re putting together treat plates. A couple savory options are always tasty too.
I’m sharing one last tasty Christmas recipe on Monday that I am so excited about. It just might blow your mind so stay tuned. And buy pretzels because more sweet and salty is coming at you.
- 3 cups brown sugar
- 2/3 cup dark corn syrup
- 4 sticks butter
- 1/2 tsp. baking soda
- 1/2 tsp. vanilla
- 2 boxes Rice Chex cereal
- 1 (14 oz.) can cashews
- In a small saucepan, combine butter, brown sugar and corn syrup. Bring to a boil and cook for 2 minutes. Remove saucepan from heat and stir in baking soda and vanilla.
- In a large bowl, dump both boxes of cereal. Pour caramel over cereal and stir until coated. Microwave for 2 minutes. Remove from microwave, add cashews and stir. Microwave 2 more minutes.
- Pour onto parchment and spread out. Let cool and break up into pieces.
